MOIST & DELICIOUS LOW-GLYCEMIC/NO-ADDED-SUGAR CORN MUFFINS

As you might have noticed, I've been on vacation from blogging for almost a month. However, I haven't been idle.  You might remember me mentioning back in April that I was diagnosed as pre-diabetic, so I have been adjusting my vegan diet to a low-glycemic vegan diet, which means also adjusting some recipes, totally revamping others, or even starting from scratch, and tossing some out, as well. (You can read a bit about this in this blog post and this one. And, PS: I've dropped 13 lbs without even trying, and my blood tests are definitely improving. )

We mostly eat fresh fruit (often with homemade soy yogurt) when we want a dessert, but occasionally I make Chocolate "Nice Cream", made with 3 sliced frozen ripe bananas, 1/3 cup dark unsweetened cocoa powder, 1/4 cup soy milk, a pinch of salt, a little vanilla extract, and sometimes a dollop of nut butter, blended until creamy-smooth in the food processor, then frozen-- no sugar or sweetener of any kind needed! So delicious!  

I've been eating only sprouted grain or whole rye breads, and also investigating other low-glycemic grains and flours. Quinoa, teff, and amaranth are all very well, but they are expensive (as is commercial sprouted grain flour), difficult for some people to find, and often too strong in taste to use in many recipes. My favorite quartet of LG flours is comprised of oat flour, barley flour, millet flour (all can be ground from grain to flour in a dry high-speed blender if you do not have a grain mill) and chickpea flour. (White bean flour can be used in place of chickpea flour.) Buckwheat and rye are also excellent, and I always have some in my freezer, but their strong flavors make them less useful.

Lately, I've been working on a low-glycemic, low-fat vegan brownie-- can you tell that we love chocolate? I'm not there yet, but will report back. Another recipe that 
I've been working on is a low-fat, but moist, low-glycemic vegan cornbread or corn muffin. Cornbread is a particular favorite of mine. I've tried many recipes from online sources and cookbooks, but, in the end I successfully revised one of my own corn muffin recipes and it's easy, quick, and inexpensive, as well as delicious.

The following recipe is based on a recipe from my book "The Fiber for Life Cookbook" (Book Publishing Co., Summertown, TN; © 2002). It has been a favorite of ours for many years, because we love anything corn-y, and these are double-corn-y! The canned cream-style corn in the recipe (which contains no cream or dairy whatsoever) adds more fiber, and makes the muffins moist and sweet. If you don't have a can in your pantry, or prefer not to use it, you will need some thawed and drained frozen sweet corn-- see note at the end of the Ingredient List in the recipe.

BRYANNA'S MOIST & DELICIOUS LOW-GLYCEMIC/NO-ADDED-SUGAR CORN MUFFINS 
Makes 12     

(This recipe also happens to be gluten-free, can be soy-free, and contains no sugar or syrup of any kind, and no artificial sweeteners.)


DRY MIX:
1 cup yellow cornmeal 
1/2 cup oat flour
1/4 cup barley flour
1/4 cup millet flour
1/2 T. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
WET MIX:
3/4 cup non-dairy milk
2 T. oil
2 tsp. powdered egg replacer (such as Ener-G or Orgran)
ADDITIONAL:
14 oz. can cream-style corn (This product does NOT contain dairy products.) OR, in place of canned cream-style cornyou can mix 14 oz. of thawed frozen sweet corn (do not drain) with the Wet Mix ingredients in a blender or food processor for about 5 seconds-- some lumps of corn should remain. See photos below to judge texture.



Instructions:
Preheat the oven to 375 degrees F.  Oil 12 muffin cups.   Mix the Dry Mix ingredients together well in a medium bowl.  Mix the Wet Mix ingredients in another (2 to 4-cup) bowl or pitcher with a whisk or with a hand/immersion blender.  Pour the contents of the can of "cream-style" corn into the Wet Mix and stir well. 

Pour this mixture into the Dry Mix and mix briefly.  Spoon evenly into the muffin tin.  Bake 15-20 minutes. (Test one of the muffins with a toothpick after 15 minutes, to see if the toothpick comes out clean-- if it dies not, bake for a few minutes more.).

Loosen them carefully with a table knife and turn them on edge.  Place the muffin tin on a rack, cover the muffins with a clean tea towel and cool for a few minutes before serving.  Cool thoroughly before storing.  These freeze well.

SWEET & TENDER VEGAN CORNMEAL MUFFINS WITH COCONUT & RAISINS (OR OTHER DRIED FRUIT)

A good friend of ours was coming over for coffee this morning, so I wanted to bake something simple but yummy.  I've had a hankering for cornbread lately, but I haven't been baking at all lately, mostly because of the heat.  However,  it was a bit cooler this morning, so I thought I would make some muffins-- a-little-bit-sweet cornmeal muffins to go with the coffee and satisfy my craving at the same time. They turned out well-- just sweet enough, nice and moist, not high in fat, and with a bit of coconut crunch.

The whole wheat pastry flour, which is lower in gluten than regular whole wheat flour, and the wetter batter, results in a very tender and moist muffin, despite the smaller than usual amount of oil.

BRYANNA'S SWEET & TENDER VEGAN CORNMEAL MUFFINS WITH COCONUT & RAISINS (WITH VARIATIONS)

18 large muffins
This is a variation on my favorite Yankee-style cornbread. It’s moist and corny, high-fiber and low in fat.

DRY MIX:

2 cup fine cornmeal
1 1/2 cups whole wheat pastry flour
2/3 cup soy, chickpea or pea flour
1/2 cup granulated unbleached organic sugar
2 tsp. baking powder
1 1/2 tsp. salt
1 tsp. baking soda
WET MIX:
2 tablespoons lemon juice
2 cups + 6 tablespoons nondairy milk  
1/2 cup aquafaba (chickpea cooking broth) OR unsweetened smooth applesauce 
1/4 cup oil 
ADDITIONS:
1/2-2/3 cup fine shredded coconut
1/2-2/3 cup raisins or dried cranberries, or other chopped dried fruit  
VARIATIONS: 
If you like, use 2/3-1 cup chopped toasted walnuts or pecans instead of coconut; and/or use 1-2 c. fresh cranberries or blueberries instead of the dried fruit.
            
Turn oven to 400 degrees F. Lightly grease 18 muffin cups (preferably) with my Homemade Cake Release or oil.

Whisk the Dry Mix ingredients together well in a large bowl. Whisk or blend the Wet Mix ingredients together and add to the Dry Mix, along with the coconut and raisins or dried cranberries, etc.. Mix briefly. The batter will be wetter than most muffin batters, but don't worry! 


Ladle the batter into the greased muffin cups. The batter will be right up to the tops of the muffin cups. Bake 20 minutes. Test for doneness with a clean toothpick.


Place the muffin pans on racks and let sit for about 5 minutes, then release the muffins and serve warm.

                                                          Almond Crumb Cake Muffins


I don't make muffins very often these days, since it's just the two of us most of the time. (You can indeed have too many low-fat muffins, by the way!) But we had a visitor for a few days and one of my granddaughters came over as well one day, so muffins seemed appropriate. Below are the recipes for the two muffin recipes I made during the last few days.

Muffins are pretty easy to veganize, and to make lower in fat. I like muffins that are moist, not crumbly and dry, too, and it's not difficult to achieve that. My muffin batters are a little bit runnier than you might be used to (like my cake batters), but that seems to be a plus.

My standard procedure is to use pastry flour (usually a whole wheat type) instead of all-purpose flour because it contains less gluten. If you are using plenty of fat, the flour's not a problem, because the fat coats the gluten in the flour and makes it tender. However, if you use less fat, you want to use a flour that is lower in gluten content, such as pastry or cake flour. This is made from a soft wheat, whereas bread flour is made from hard wheat, and all-purpose is in between.

I generally substitute smooth unsweetened applesauce for up to 3/4 of the fat called for. I freeze canned or homemade applesauce for baking in ice cube trays and pop the cubes into zipper-lock bags.  Each one equals 2 tablespoons, making it easy to measure it out and eliminating waste.  I use 1/4 cup nondairy milk (I generally use soy, which contains some lecethin, as egg yolks do) in place of each egg-- sometimes I add flax, sometimes I use a little egg replacer, but I usually keep it simple in muffin recipes.

I made the following muffins as a breakfast muffin.  They are not super-sweet, which I prefer.

BRYANNA'S VEGAN ALMOND CRUMB CAKE MUFFINS

Makes 12 muffins
These muffins are super easy and quick to make, but nice enough for afternoon tea or coffee.

Dry Mix:
1 1/2 cups whole wheat pastry flour
1 cup unbleached flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
Wet Mix:
1 3/4 cups soy milk
1/4 cup smooth applesauce
(TIP: Freeze canned or homemade applesauce for baking in ice cube trays and pop the cubes into zipper-lock bags-- each one= 2 tablespoons)
2 Tbs oil
1/2 cup unbleached organic sugar
1 Tbs vinegar
1/4 tsp pure almond extract
Topping:
1/3 cup slivered almonds
1/4 cup brown sugar
1/4 cup whole wheat pastry flour
2 Tbs melted vegan butter (try my homemade palm oil-free vegan butter)

Heat oven to 400ºF. Grease 12 muffin cups, or use paper cupcake liners or parchment muffin cup liners (how to make your own), I don’t like to use silicone liners with muffins because I like a bit more f a crust on muffins, as opposed to cupcakes, which need to be softer.

In a small bowl, mix together the Topping ingredients with your fingers and set aside. Whisk together the Dry Mix ingredients in a medium mixing bowl. Whisk together the Wet Mix Ingredients in a medium bowl or measuring pitcher until smooth.

Add the Wet Mix to the Dry Mix and mix briefly. Spoon evenly into muffin cups. Sprinkle the tops of the muffins evenly with the Topping. Bake for about 22 minutes. Place pan on a baking rack to cool for at least 5 minutes before serving. The muffins can be eaten hot or at room temperature. Cool leftovers thoroughly before storing in a plastic bag or rigid plastic container. These freeze well.

These next muffins are a favorite of mine, because I love anything corny, and these are double-corny! The stoneground cornmeal contains more fiber than the ordinary refined type. The creamed corn (which actually contains no cream) adds more fiber, and makes the muffins moist and sweet without added sugar and with very little oil.  A perfect go-with with our Border Beans and braised greens for dinner last night.

BRYANNA'S CREAMY CORN MUFFINS
Makes 12 muffins
This recipe is from my book, "The Fiber for Life Cookbook".

DRY MIX:
1 cup whole wheat pastry flour
1 cup yellow cornmeal (stoneground, if possible)
1/2 Tbs baking powder
1/2 tsp salt
1/4 tsp baking soda
WET MIX:
3/4 cup non-dairy milk
1 Tbs oil or melted vegan butter (try my homemade palm oil-free vegan butter)
1/2 Tbs powdered egg replacer (Ener-G or Orgran)
ADDITIONAL:
1 can (14-15 oz.) cream-style corn (this product does not contain dairy products)

Preheat the oven to 375 degrees F. Grease 12 muffin cups, or use paper cupcake liners or parchment muffin cup liners (how to make your own), I don’t like to use silicone liners with muffins because I like a bit more f a crust on muffins, as opposed to cupcakes, which need to be softer.

Pour the contents of the can of creamed corn into the blended Wet Mix and stir gently but thoroughly. Pour this mixture into the Dry Mix and mix briefly. Spoon the batter evenly into the muffin tin. Bake 20 minutes.

Place the muffin tin on a rack, cover the muffins with a clean tea towel and cool for a few minutes before serving hot.

Cool leftovers thoroughly before storing in a plastic bag or rigid plastic container. These freeze well.

VARIATIONS:
NUTTY AND/OR FRUITY CREAMY CORN MUFFINS: Add 2/3 c. chopped toasted walnuts or pecans; and/or 1 c. fresh cranberries or blueberries, or 1/2 c. dried cranberries or blueberries, or 3/4 c. chopped pitted prunes. Bake the batter in 12 greased muffin cups for about 25 minutes at 400 degrees F.
HOT CHILE SURPRISE CREAMY CORN MUFFINS: Make muffins as directed above, but spoon only half the batter into 12 muffin cups. Spoon about 2 tsp. of hot red pepper or jalapeño jelly into the center of each portion. Top with the remaining batter and bake as usual.
GREEN CHILE CREAMY CORN MUFFINS: To the batter, add 1 (4 oz.) can , drained well, of chopped green California chiles. Sprinkle the top of each unbaked muffin about 1/2-1 T. vegan parmesan or other vegan cheese.
BASIL PARMESAN CREAMY CORN MUFFINS: To the batter, add 1/4 c. chopped fresh basil and 2 T. vegan parmesan. Sprinkle the top of each unbaked muffin about more vegan parmesan.
