I probably made them too thick and crowded them in the pots. It was a little bit of guesswork separating the cutlets and I debated pan frying them but decided on baking the cutlets on parchment lined cookie sheets in a 400° oven for about an hour, and flipping after ~20 mins, and rotating sheets on racks. They turned out deliciously! They’re the texture and taste of chik’en fried steak, a little bit crispy, moist, and savory. (I didn’t have paprika so subbed in some tandoori seasoning). I’m so glad to have found your recipe and you’ve definitely upped my seitan game, and gave me a great use for okara. Great texture from Instant Pot cooking.

The ingredients call for 1 and 1/3 cup chickpea flour and that weighs 160 grams, by the way.

Also, if one needs to dry out the grated parmesan a little, can use a microwave with caution to not cook so long that it's completely dehydrated and activated the maillard process.

Thanks again,
Nicholenicholehttps://www.blogger.com/profile/08708470373478209835noreply@blogger.comtag:blogger.com,1999:blog-24141461.post-83762759110576973822021-09-26T19:37:40.100-07:002021-09-26T19:37:40.100-07:00I love rapini and am always looking for recipes ap...I love rapini and am always looking for recipes appropriate for my family (one vegan and one diabetic). I am on a low sodium/low fat diet, so I made this without salt and without the vegan butter. I didn't have garlic, so added in a tablespoon of garlic powder instead, doubled the nutritional yeast, and added in a couple tablespoons of chopped jalapenos. We're actually going to eat it for dinner tonight as a main, instead of a side dish. I'm going to serve it with some oven roasted potatoes and vegan creamed spinach. :)Aimee B.noreply@blogger.comtag:blogger.com,1999:blog-24141461.post-32120304210481797272021-09-19T19:46:59.062-07:002021-09-19T19:46:59.062-07:00Amazing. I'm making this salad, and followed the instructions to mix all the marinade ingredients. Then four steps down, it says to sprinkle the soy curls with potato starch, and heat the oil in a frying pan. I already mixed the potato starch and oil in with the marinade. It's not a big deal, but I thought you may want to list the potato starch, oil, and green onions separately. Thank you again and best wishes to you!
