MAPLE WALNUT MUFFINS (WITH LOW-GLYCEMIC OPTIONS)
Saturday we were expecting a big storm (which never really developed) and we had prepared accordingly. DH suggested that I bake something before we lost power (which we never did, this time). I decided on muffins, since I haven't made them in a long time. I had a bit of a craving for a maple/walnut treat, so here's what I came up with-- a light, moist whole grain muffin with just a little oil added to the batter. A great treat with tea or coffee.
UPDATE: For people dealing with high blood sugar, pre-diabetes, weight issues, or diabetes, I have added some notes to the recipe about replacing all or some of the sugar and maple syrup in the recipe with sweeteners (not artificial) that have are lower on the Glycemic index or have a lower Glycemic Load. BRYANNA'S VEGAN MAPLE WALNUT MUFFINS
Yield: 12 , or 8 larger muffins
Nutrition facts calculated using the unbleached sugar and nuts.
For a lower glycemic recipe, use 1 cup oat flour and 1/2 cup chickpea or white bean flour instead of the wholewheat pastry flour.
Mix A:
1 1/2 cups whole wheat PASTRY flour (be sure to use pastry flour for a light muffin)
1 1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp salt
Addition:
3/4 cup chopped walnuts-- pecans would be good, too
Mix B:
7 Tbs UN-sweetened smooth applesauce
1/4 cup maple syrup (the darker type-- Grade B)
1/4 cup unbleached organic granulated sugar OR your favorite granular sugar alcohol-based sweetener
OR use 4-6 T. Date Puree instead of sugar-- see NOTE below for Date Puree recipe-- and use only 5 Tbs. applesauce.
1/3 cup soy milk or nut milk or your favorite vegan creamer (one that is not sweet-- here's an easy, inexpensive nut-free homemade creamer recipe)
1/2 Tbs lemon juice
2 Tbs oil
Additional, but optional:
a few tablespoons more maple syrup for brushing
Preheat oven to 375 degrees F. Spray a 12-cup muffin pan with oil from a pump sprayer, or grease with Cake Release (here's my homemade version).
In a medium bowl, mix together the Mix A ingredients. Stir in the walnuts. In a smaller bowl, whisk together the Mix B ingredients. Pour Mix B into Mix A and stir briefly. Divide the batter between the 12 prepared muffin cups. Bake for 15 minutes. Test one of the muffins with a toothpick to make sure they are cooked through.
Brush the muffin tops lightly with the extra maple syrup. Loosen the muffins with a table knofe and turn them on their sides to cool until they can be handled.

CRISPY MARINATED TOFU WITH APPLES & ONION IN CREAMY WHITE WINE SAUCE
Yesterday I was trying to use up some local apples that we've had stored. With some of them, I made this easy apple cake (minus the chocolate drizzle) for tea with a friend yesterday, but I really want to use up these lovely cooking apples before they go bad. So, I devised this quick and easy tofu saute to serve with a salad and some roasted nugget potatoes. Thumbs up on this one!
NOTE: If you don't want to use the tofu, you can substitute about 2 cups of reconstituted Soy Curls (see about this product here) or thin seitan cutlets, or your favorite commercial vegan "chikn" slices or cutlets. Dredge whatever you are using in Seasoned Flour (see below) and brown as for the "B of T" (see below).

BRYANNA'S CRISPY MARINATED TOFU WITH APPLES & ONION IN CREAMY WHITE WINE SAUCE
Servings: 2
NOTE: If you are using B of T/Breast of Tofu, you need to marinate the tofu slices at least 8 hours before cooking.
8 slices Breast of Tofu, Crispy Slices or Crispy Oven-Baked (see below)
1 tablespoon olive oil
1 medium apple, thinly sliced (only peel if the skin is tough or doesn't look good)
1/2 medium onion, thinly sliced
2 cloves garlic, chopped
1 pinch dried crumbled sage (don't use powdered)
1 pinch dried thyme leaves (don't use powdered)
1/2 cup dry white wine (can be non-alcoholic)
1/2 cup vegan "chikn-y" broth (I like Better than Bouillon No-Chicken Vegan broth paste)
1/4 cup plain vegan creamer (I used So Delicious coconut milk creamer) mixed with
1 teaspoon wholegrain mustard
Heat the olive oil in a seasoned cast iron or carbon steel 12-inch skillet over medium heat. Add the sliced apple, onion and garlic. Saute until the onions soften. Add the sage and thyme, the wine and broth. Bring to a boil, then slip in the crispy tofu. Raise the heat to high a reduce the liquid in the pan by about half. Pour in the creamer/mustard mixture and heat through.
Serve immediately with roasted nugget potatoes or mashed potatoes, polenta or steamed rice, quinoa or bulgur wheat.

BRYANNA'S BREAST OF TOFU (Known in our house as "B of T")
Servings: 8
Yield: 32/ 3-inch x 2-inch slices
This recipe has appeared in all of my books. It's a staple in our house-- I always have some extra-firm tofu slices marinating in the following mixture. They will keep refrigerated in the marinade for up to two weeks, ready for a quick and delicious meal. They can be pan-fried plain on a nonstick skillet, or coated with Seasoned Flour and shallow-fried to make a crispy "skin" that is delectable hot or cold. Serve them plain, in salads and sandwiches, or with any sauce that you would have used on chicken. Instead of slices, you can marinate chunks, for using in kebabs,etc.
1 1/2 lbs. firm, extra-firm or pressed tofu (NOT silken tofu!)
MARINADE:
1 1/2 cups water
1/4 cup soy sauce or tamari
3 Tbs nutritional yeast flakes
2 tsp dried crumbled sage (not powdered)
1/2 tsp dried rosemary
1/2 tsp dried thyme leaves (not powdered)
1/2 tsp onion powder
Seasoned Flour for dredging (see below)
OPTIONAL: olive oil
Prepare the marinade by mixing all of the ingredients together in a 5-cup rigid plastic container with a tight lid. Slice the tofu about 1/4" thick and place in the marinade so that it is fairly tightly-packed and covered with liquid. Cover and refrigerate for up to two weeks, shaking daily.
To pan-fry plain, low-fat:
Simply cook the tofu slices over medium heat in a seasoned cast iron or carbon steel skillet until golden brown on both sides.
To Crispy Oven-Fry: (This is the method in my "Almost No-Fat Cookbook"):
Coat the tofu slices in Seasoned Flour (below). Lay the slices in single layers on oiled DARK baking sheets (they brown better on dark baking sheets), not touching. Bake in a preheated oven at 400 degrees F for about 15 minutes, or til the bottoms are golden. Turn the slices over and bake about 15 minutes more, or until the other side is golden. Cool on racks if not eating immediately.
To make Crispy Slices, (my favorite way):
Coat the slices with Seasoned Flour (below). Heat about 1 T. of olive oil or neutral cooking oil in a seasoned cast iron or carbon steel skillet over medium heat (no hotter). When the oil is good and hot, add the slices and cook (watching carefully) until golden brown and crispy on the bottom. Turn the slices over and cook the other side until golden and crispy. The medium heat works really well when frying things crispy in less oil than usual.

2 c. wholewheat, or other wholegrain, flour,
1/4 c. nutritional yeast flakes,
1 tsp. salt
1 tsp. onion or garlic powder (or a combination), optional
freshly-ground black pepper to taste.
Optional: some Cajun Seasoning or Old Bay Seasoning

TAGLIATELLE WITH RAPINI, ONION, CHICKPEAS & CREAMY WHITE BEAN FLOUR-BASED VEGAN BECHAMEL
I have been miserably unproductive lately-- January blahs, I guess. But one thing I've been working on intermittently is cooking with bean flours. A few months ago I got a new WonderMill Electric Grain & Bean Mill, so I can now mill fresh bean flour in my new machine. It has a new Bean Adapter and also a Small Grain Adapter-- see photo below. (PS: The Bean Adapter is very new, so enquire about it via the WonderMill website. Here's what this mill will grind.) You can also line the canister that the flour goes into directly from this grinder with a bag, which makes it so easy to clean up. And you just twist-tie the bag and place it in the freezer (I keep bean flour in the freezer so it doesn't go rancid).
I've really been enjoying cooking with fresh chickpea flour and fresh white bean flour, as well as my own whole wheat flour. Here are some posts I've done so far on: wheat flour one, two, three, four ; chickpea flour one, two ; and white bean flour one. That was a white bean flour-based vegan Southern-style white biscuit gravy and it was delicious.

Today I was trying to figure out what to make for a quick lunch. I had rapini that needed using-up (rapini doesn't keep very long), so I decided a simple creamy pasta dish with rapini, onions and a few chickpeas would be a a good idea. I've been wanting to make a fat-free vegan white bean flour-basted bechamel sauce for a while, so this seemed like a good time to try it.
It turned out to be so easy and so good-- I don't know why I haven't tried it before this! This will be my go-to Bechamel from now on!

BRYANNA'S TAGLIATELLE WITH RAPINI, ONION, CHICKPEAS & CREAMY WHITE BEAN FLOUR-BASED VEGAN BÉCHAMEL
Can be gluten-free, soy-free, nut-free and/or fat-free if you wish.
4 servings
This is a simple whole-meal recipe, but it's very satisfying and nutritious with a little kick, if you use the chile flakes). Serve with some vegan parmesan sub to sprinkle on top (we like Go Veggie! soy parmesan).
Note: You can use more or less bean flour for other versions of this basic sauce, depending on the thickness you are going for.
Fat-Free, Creamy Vegan White Bean Flour-Based Béchamel:
2 cups non-dairy milk of choice (use Original type)
1 teaspoon vegan chicken-style broth powder or paste (I like Better Than Bouillon No-Chicken Vegan Broth Base)
1/4 cup white bean flour (or white urad dal flour)
1/4 teaspoon salt
1 pinch grated nutmeg
freshly-ground pepper to taste
Other Ingredients:
8 oz dry egg-free tagliatelle pasta (NOTE: Tagliatelle is a dry flat pasta, often sold rolled up in "nests"-- check labels, as it is often made with eggs.) OR use linguine or fettucine, or any GF flat pasta
1 tablespoon olive oil (see fat-free tip below)
1 medium onion, chopped
1 cup canned or cooked chickpeas, rinsed and drained
3 cloves garlic
1/2 teaspoon red chili flakes (optional, but recommended)
2 cups chopped lightly-cooked rapini (or you could substitute mustard or turnip greens, or kale)
To make the Béchamel sauce, place all of the Béchamel ingredients in a blender and blend until very smooth. I cook the sauce in the microwave, in a large ceramic or Pyrex batter bowl. I cook it on 100% power for three minutes, then whisk it then repeat for 3 minutes more. If you prefer, you can cook it in a heavy saucepan over medium-high heat, stirring constantly, until the sauce boils and thickens. Note: If you make it ahead of time, reheat gently on the stove or in the microwave.
Place a large pot of salted water on the stove to come to a boil. When it boils, add the pasta and boil until just al dente-- 9 to 10 minutes. When it's ready, drain in a colander and leave it there.
While the pasta cooks, heat the oil in a large heavy skillet (seasoned carbon steel, seasoned cast iron, or hard-anodized) over medium-high heat. Add the onions and saute until they start to wilt and maybe brown a bit. Add the chickpeas, garlic and chile flakes, and saute a bit more. Lower the heat and stir in the chopped rapini and sprinkle on a bit of salt. Stir the mixture until heated through.
Fat-Free Tip: If you prefer not to use any fat in this dish you can either steam-fry the onions in a nonstick pan over medium-high heat, adding a squirt of water every now and then to keep it from sticking, and keeping it moving, until the onion starts to wilt-- then proceed as directed. OR you can place the onion in a covered microwave-safe casserole and cook on 100% power for about 4 minutes. OR you could broil them quickly on a baking sheet about 4" under your oven's broiler (watch carefully!) until they start to brown and get limp.
Then add the chickpeas, garlic and chile flakes, cover and cook for 1 more minute.
Rinse the cooked pasta with hot water, shake to drain well, and add the pasta to the skillet, along with the Béchamel. Using a large spoon and a pasta rake, mix the ingredients until well-distributed. Serve in heat pasta bowls along with the vegan parmesan.

PUMPKIN FOCACCIA-- A GREAT ACCOMPANIMENT TO WINTER SOUP MEALS
So sorry to have been AWOL from blogging for a while! On top of trying to get back to normal after the Holidays, I've had a deadline to meet and LOTS of computer trouble (which I hope is over now). I hope to be reinvigorated in the kitchen very soon! In the meantime, here is a recipe for one of our favorite bread recipes-- so good with a bean or vegetable soup!
BRYANNA’S PUMPKIN FOCACCIA
Makes one 11 x 15-inch focaccia

1 cup canned pumpkin puree (or use mashed cooked pumpkin or other orange winter squash, drained in
a cheesecloth bag for several hours-- the draining is important!)
1 1/2 tsp dry active yeast OR 1 tsp instant yeast
1 cup plus 2 Tbs. warm water (105-115°F)
4 cups unbleached white flour
1/4 cup ground
golden flax seed
1/4 cup wheat bran
1 Tbs extra-virgin olive oil
2 tsp salt
TOPPING:
2 Tbs extra-virgin olive oil
1 tsp kosher salt
1/4 cup raw pumpkin seeds
IF YOU ARE MAKING THIS BY HAND, OR WITH A HEAVY-DUTY
MIXER, stir the yeast into the warm water in a large mixing bowl, or bowl
of your stand mixer. Let stand 5
minutes. Add the oil and pumpkin. Add the bran, flax, and salt, and then the
flour in two additions. Mix until the
dough comes together. Knead the dough for about 10 minutes, either by hand on a
lightly floured surface, or with the dough hook of your heavy-duty mixer, until
the dough is velvety, firm and slightly sticky.
IF YOU USE
A FOOD PROCESSOR, mix the flour, salt, bran
and flax seed in the processor bowl.
While the machine is running, add the mixture of water, dissolved yeast,
oil and pumpkin until the dough forms a ball on top of the blade. If it's too dry to come to a ball, add water
a few DROPS at a time until it does.
Process for 30 seconds.
IF YOU USE AN AUTOMATIC BREAD MACHINE, choose the Dough Cycle, which will mix and rise the dough, but not bake it.
FIRST RISE: Place the dough in a lightly oiled bowl, cover
tightly with plastic wrap, and leave to rise until doubled, about 1 1/2 hours.
SHAPING AND SECOND
RISE: Punch down the dough and roll it and pat
it into a rectangle to fit a well-oiled 11 by 15" cookie sheet, and
stretch the dough toward the edges. Cover with a damp towel, let sit for ten
minutes, and then stretch a bit farther to the edges. Cover again and leave
until doubled, about 45-60 minutes.
Preheat the oven to 425°F.
Just before you are ready to bake, dimple to dough with your
fingertips. Brush with the olive oil, and sprinkle the pumpkin seeds and salt over
the dough. Bake for 20 minutes, or until golden. Remove from pans immediately and cut into 12 squares. Serve while warm and crispy, if possible.

QUICK & EASY, CHUNKY, SPICY, CREAMY VEGAN MULLIGATAWNY SOUP
BRYANNA'S NEW VERSION OF VEGAN MULLIGATAWNY SOUP
Serves 6
This new version is super-easy and a bit chunkier, spicier and creamier than the older one that is in my book "The Fiber for Life Cookbook"-- very yummy!
1 tablespoon olive oil
1 large onion, chopped
2 stalks celery (with leaves), chopped
2 medium carrots, scrubbed and chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
1 tablespoon golden or red curry paste or powder
about 1/2 tsp. chile flakes (or to taste)
1 tsp. ground cumin
5 cups of "chickeny" vegan broth (I like Better Than Bouillon No-Chicken Vegan Broth Base))
1 green bell pepper, cleaned and chopped
1 red bell pepper, cleaned and chopped
1 cup tomato juice + 2 tablespoons tomato paste
(I just used the thick juice from the canned Italian tomatoes we buy)
1 1/2 cups cooked or canned (15 oz. can) chickpeas, rinsed and drained
2 cups vegan "chicken-y" strips, OR reconstituted Soy Curls (see this page for info)
One 14 oz. can lite coconut milk OR 1 1/2 cups any plain nondairy milk+ 1/4 cup coconut flour
1 apple, chopped fine
salt and freshly-ground black pepper to taste
To Serve:
about 3 cups of steamed brown Basmati rice
In your soup pot, heat the oil over medium-high heat. Add the onions, celery, carrots and garlic. Saute for several minutes, until the onions have softened, adding a squirt of water as necessary to keep from sticking. Alternatively, microwave the mixture in a covered microwave-safe casserole for about 7 minutes.
Either way you cooked it, mix the onion mixture in the soup pot with the grated ginger, curry paste or powder, chile flakes and cumin. Stir over medium-high heat for a minute or two. Stir in the broth and add the peppers, tomato juice, chickpeas and vegan "chicken-y" strips. Bring to a boil, then turn down to a simmer, cover and cook for about 10 minutes.
Stir in the coconut milk (or alternate) and the apple and simmer for about 5 more minutes. taste for salt and pepper. To serve, add about 1/2 cup of steamed brown rice into the middle of the soup in each bowl.

VEGAN CHEESECAKE SWIRL FUDGE BROWNIES WITH A HINT OF ORANGE

BRYANNA’S VEGAN CHEESECAKE SWIRL FUDGE BROWNIES WITH A HINT OF ORANGE
Makes 32 squares
Brownie Batter:
6 tablespoons oil
6 tablespoons hot water
2 cups brown sugar
1 cup Dutch Process cocoa powder (unsweetened; organic fair trade if at all possible )
4 teaspoons pure vanilla extract
2 tablespoons grated organic orange zest (orange part only)
1/2 cup water
2 tablespoons flax seeds
2 tablespoons Ener-G or Orgran egg replacer powder
1 cup whole wheat flour (not pastry
flour)
1 teaspoon baking powder
1/2 teaspoon salt
Cheesecake Swirl:
1 (12.3
oz.) box extra-firm silken tofu
1/3 cup raw
cashew pieces, soaked in boiling water to cover for at least 10 minutes and drained
6 tablespoons
organic granulated unbleached sugar
2 tablespoons
soy or other plain nondairy milk
1 tablespoon
lemon juice
1 tablespoon
cornstarch (can be organic)
1 teaspoon pure vanilla extract
1/4 teaspoon
salt
Preheat the oven to 325 degrees F. Grease a Pyrex 9 x 11” baking pan (the glass pan keeps the brownies from burning, since they
have to cook longer in this recipe than normal) with Cake Release—here’s my homemade palm oil-free version.
In a small saucepan, mix the oil and 6 tablespoon water
gently over medium heat. Stir in the sugar until dissolved, then whisk
in the cocoa, vanilla and orange zest. Set aside.
Place the 1/2 cup water, flaxseeds and egg replacer in a
blender. Blend the mixture at high speed for several minutes, until it
is “gloppy” like slightly beaten egg whites, with little brown flecks of flax
skin throughout. Fold this into the cocoa mixture.
In a small bowl, mix together the flour, baking powder,
and salt. Add the flour mixture to the cocoa mixture and stir
briefly.
Spread brownie batter in the prepared baking pan.
To make the Cheesecake Swirl mixture, place the filling ingredients (make sure that the cashews are soaked and drained as
directed) in a food processor and blend until very smooth
(be patient).
Drop the mixture in small “blobs” evenly spaced over the
brownie batter. Swirl the mixture through the top of the brownie
batter with a table knife, as artistically as you can. Bake for 35
minutes.
Cool on a rack, then cut into 32 squares with a sharp
serrated knife.

TWO COMFORTING WINTER-WEATHER DISHES: POTATO TORTINO WITH RAPINI & MY NEW VERSION OF MUSHROOM-BARLEY SOUP

| New Mushroom-Barley Soup We've been having a nice stretch of cold, but quite sunny, weather lately, but today we had a little snow, too! (Our "grand-dog", Skeena, a 15-year-old Malamute who has been staying with us for a few days, has been loving the snow.) The two dishes that I made yesterday (the soup for lunch with hummus, olives, marinated artichokes, tomatoes and baby greens on homemade crusty rolls; and the potato dish for dinner, along with a big salad) were certainly suited to the weather. Today, we were truly grateful for the thick, tasty leftover mushroom-laden barley soup for lunch again. My paternal grandmother's family emigrated to Peru from the Italian province of Liguria, so the cuisine of the region naturally interests me:

appetizer, by adding little more than miscellaneous odds and ends..." Colman Andrews in "Flavors of the Riviera" (Bantam Books, NY, 1996), quoted in my book “Nonna’s Italian Kitchen: Delicious Home-Style Vegan Cuisine”.
That's exactly why I love this recipe, which is from "Nonna's Italian Kitchen". There are many ways to make this, depending on what you have in your refrigerator. This is the way I made it yesterday, but there are suggestions for other variations. Printable Recipe
BRYANNA’S TORTINO DI PATATE (Layered Potato
Casserole—this time with rapini, onions, vegan Italian sausage, and vegan
cheese.)
(Can be gluten-free and soy-free)
Serves 6
A potato
tortino (tortino mean “little cake” in Italian) is a layered casserole made
with thinly-sliced pre-cooked waxy potatoes.
It can be made simply with potatoes, sautéed onions, and breadcrumbs, or
a more elaborate version can be made by adding one or more of the other
additions or alternatives listed at the end of the ingredient list.
2 lbs. waxy
potatoes
1-4 T.
extra-virgin olive oil (depending on your taste)
1 large
onion, thinly sliced
2-3 cups
chopped (about 1/2 a bunch) blanched
rapini (broccoli rabe) or other
greens
1 to 2
crumbled spicy vegan sausages (such as Field Roast Chipotle)—add a
few dried chilli flakes if the sausage is not very spicy
2 large cloves garlic, minced
about 1/2
cups fine dry breadcrumbs or panko (can be whole
grain; can be gluten-free)
1/4-1/2 cup
vegan broth (I like Better Than Bouillon No-Chicken Vegan soup base)
salt and
freshly-ground black pepper to taste
about 1/4
cup vegan Parmesan substitute (we like Go Veggie! soy parmesan)
about 1 cup
of Daiya Mozzarella Shreds or other vegan white cheese, or your own homemade
version
ADDITIONS OR ALTERNATIVES:
1.) Instead of vegan mozza, use about 1 to 1 1/2
cups of thick Besciamella Sauce (made with or without the oil),
dividing it between the layers, with some on the top.
2.) Add 1/2 lb. fresh ripe sliced plum tomatoes,
or about 1 cup canned tomatoes, drained and diced or chopped (add a clove of chopped
garlic to the onions)
3.) Add 2 tablespoons chopped fresh rosemary and 1
oz. dried porcini or boletus mushrooms, soaked in hot water, drained and
chopped (use reserved soaking water for liquid in recipe) AND/OR 1/2 lb. any
kind of fresh mushrooms, sliced and sautéed in a little extra-virgin olive oil
3.) Instead of the sausage, use 6 thin slices
commercial vegetarian "bacon" or ham" (or your homemade version)
Some other ideas:
a.) You could layer the potatoes with grilled or
broiled zucchini or eggplant slices;
b.) or add some fresh basil or other herbs
c.) You could blend the broth with 1/2 cup or so of silken tofu (and a tsp of The Vegg [egg yolk sub], if you like) and pour 1/2 of it over each layer of potatoes, for an “eggy” binder.
Steam or microwave
the potatoes, cut into even-sized chunks, until they are just tender, but still
firm. (I don't usually peel them, but
you can, if you wish.) When they can be
handled easily, slice them about 1/4-inch thick.
In a large heavy
(can be non-stick) skillet over medium-high heat, heat the olive oil (whatever
amount you prefer). Sauté the onions in
the oil until they are soft and starting to brown. Add the minced garlic,
chopped, blanched rapini (or other greens), and sausage, and sauté for a few
more minutes.
Preheat the
oven to 400ºF.
Coat a
10-inch glass or ceramic casserole (or a 2 qt. oval casserole) with olive oil and
sprinkle it with some of the breadcrumbs.
Place a single layer of potato slices on the bottom of the dish.
Sprinkle with salt and pepper. Cover the potatoes with half of the
onion/greens/sausage/garlic mixture, and any optional ingredients you may be
using. Sprinkle with a heaping
tablespoon of vegan parmesan and cover with 1/3 of your Daiya Shreds or
whatever cheese alternative you may be using. Repeat layering once more, saving
enough potatoes and cheese alternative for one more layer. Top with the last of
the potato slices and sprinkle with salt and pepper.
Pour the broth over the dish and then top with the remaining breadcrumbs, vegan cheese alternative, and vegan parmesan. Bake for 30 minutes, or until bubbly and golden on top. Serve hot.

BRYANNA’S NEW
MUSHROOM/BARLEY SOUP
Serves 10-12
(Soy-free and can be gluten-free)
It was snowing a bit today, and quite cold. I’m so glad I made his soup yesterday! This
soup is faster to make than my older version, contains no oil, and you don’t
need any Marmite (yeast extract). AND,
just in case you aren’t near a convenient grocery store, you can use just a few
fresh mushrooms, along with some soaked dried mushrooms, which everyone should
have in their pantry for adding wonderful flavor and umami to any number of
dishes! (I buy the wild mushrooms mixture available at Costco, in a 1 lb.
container—very good buy!)
6 cups boiling water
1 1/2 oz. dried mixed wild mushrooms
1/2 cup chopped yellow onion
1 large leek, split, cleaned and chopped (If you have no leeks, use about 1 1/2 cups
chopped onion in total.)
2 cups sliced fresh mushrooms (preferably cremini)
4 large cloves garlic, minced
5 cups hot water mixed with
3 Tbsp + 2 tsp. vegan “chicken” broth powder or paste (I use Better Than Bouillon No-Chicken vegan broth paste)
1 tsp. dried rosemary
1/4 cup soy sauce or tamari
2 cups rinsed and drained cooked or canned chickpeas (one 19 oz. can)
1/2 cup water whisked with 1/4 cup unbleached white flour OR white GF flour mix freshly-ground black pepper and salt to taste (you may not need any added salt)
Pour the boiling water over the dried mushrooms in a large
bowl, pitcher or batter bowl, cover and let soak while you prepare the other
ingredients.
Place the leeks in a covered microwave-proof casserole and microwave on 100% power for 5 minutes. Remove the lid (carefully!) and stir in the
sliced fresh mushrooms and garlic. Cover
and cook at 100% power for 2 or 3 more minutes.
Drain the soaked dried mushrooms in a sieve over a pot or
bowl to catch the soaking water. Squeeze
as much of the water out of the mushrooms as possible. Chop them coarsely. Strain the mushroom
soaking water into your soup pot. Add the chopped soaked mushrooms, and the
microwaved onion/leek/mushroom/garlic mix.
Stir in the 5 cups hot water mixed with the broth powder or paste, the
barley, rosemary, soy sauce, and chickpeas.
Bring to a boil, turn down to low, cover and simmer for 30 minutes.
In a small bowl whisk the 1/2 cup water with the flour until no lumps remain. Whisk in a little of the hot broth from the soup and stir into the soup. Stir well to distribute thoroughly. Simmer for about 5 more minutes. Taste for salt and pepper. Serve hot.

CRISPY LOWER-FAT OATMEAL COOKIES (WITH CHICKPEAS USED INSTEAD OF MOST OF THE FAT!)
We felt in the mood for oatmeal cookies the other night, so I decided to experiment with some changes to my recipe for Chewy Fat-Free Oatmeal Raisin Cookies, a recipe in which pureed beans substitute for the usual butter or margarine. I had noted on that recipe that quick oats and a little bit of vegan butter might have improved them, so this time I did use quick oats and only 3/4 cup bean puree (and chickpea instead of white bean puree), along with 1/4 cup of my vegan butter. I also decided to cut out the 3/4 cup granulated sugar in the first recipe. We loved the results-- they were certainly sweet enough, and nice and crunchy. I love using beans in baking, too!
BRYANNA'S CRISPY
LOWER-FAT OATMEAL COOKIES (WITH VARIATIONS)
Yield: 32 three-inch cookies
Note: You can bake only 1/4 of the dough or 1/2 of the dough and freeze the rest for another time, if you like. If the extra dough is formed into flattened balls and frozen that way (on parchment, with parchment in between the layers, in a large freezer storage container with a tight lid), they will thaw out quickly.

Wet Mix:
3/4 cup puréed (rinsed and drained) cooked or canned chickpeas (add a bit of water if they are too
dry to purée) OR pureed well-cooked split yellow peas
1/4 cup vegan butter (try my homemade palm oil-free vegan "Buttah")
1 cup brown sugar (or coconut sugar)
1/4 cup brown rice syrup
2 vegan "eggs" (see Note below for suggestions)
Dry Mix:
1 1/2 cups whole wheat *pastry* flour
1/2 tsp salt
1/2 tsp baking
powder
1/4 tsp grated nutmeg
3 cups quick oats
Optional: (choose 1)
1 1/2 cups vegan (dairy-free) chocolate chips
OR
OR
1 1/2 cups raisins or other dried fruit (small or cut up)
Other option:
1 cup chopped nuts
NOTE: Vegan “Egg” Alternatives (choose one-- each choice below equals 2 vegan "eggs"):
1.) 1/4 cup water whisked with 2 teaspoons powdered egg replacer (Ener-G or Orgran) until frothy, with no lumps;
2.) 1/4 cup water water blended with 1 teaspoon Vegg powder until smooth (use an immersion blender);
3.) If you have the book “The Cornbread Gospels” by Crescent Dragonwagon, you can use her recipe for “Eggscellence” homemade egg replacer, which is really excellent. If you don’t have the book (which is well worth purchasing) you can read the recipe on the amazon.com “Look Inside” function for the book (scroll down to pps. 352-353) . Use 3 tablespoons of the Eggscellence powder whisked with 3 tablespoons water and 2 teaspoons liquid lecithin (soy or sunflower);
4.) 2 tablespoons flax seeds blended in a small blender jar with 6 tablespoons water until frothy and "gloppy" like egg white.
5.) 6 tablespoons aquafaba (liquid from cooking chickpeas), beaten a bit until frothy.
Instructions:
Beat together the Wet Mix ingredients until smooth in a medium bowl with an immersion blender or an electric hand-held beater. In another bowl, whisk together all of the Dry Mix ingredients EXCEPT the oats. When they are well-mixed, stir in the oats. Add any Optionals you might be using and stir to distribute. Pour in the Wet Mix and stir well until thoroughly combined.
Preheat the oven to 375°F. Divide the dough into 32 equal-sized balls. (Wet your hands a little if the dough is sticking.) Place the balls a couple of inches apart on baking parchment-lined baking sheets.
Use a flat-bottomed glass (dampen the bottom a bit to keep it from sticking to the dough) to flatten the balls evenly to about 3 inches across.
Bake the cookies for about 15 minutes, or until golden brown.
Place the cookies on cooling racks and cool thoroughly before serving.
