CHEESEY VEGAN KALE & SUMMER SQUASH TORTA (ITALIAN-STYLE SAVORY TART) WITH CRISPY LOW-FAT OLIVE OIL PASTRY
A few days ago I was craving "Torta"-- an Italian savory vegetable tart. or pie made with olive oil pastry and common all over Italy. This type of pie is especially common in the Italian province of Liguria, on the Italian Riviera, where my paternal grandmother’s family originated. It’s a large, thin double-crusted tart baked on a pizza pan. The thin olive oil dough (a little different from the olive oil pastry I used for a fruit pie here) is surprisingly pliable and easy to work with.
Though now considered a gourmet treat, torte were born of necessity—in earlier times wheat was expensive in that region and the thin dough used a small amount of flour and oil to feed quite a few. The filling could contain anything that was plentiful in the garden or on the farm, plus wild greens, mushrooms and herbs gleaned from nearby meadows, hillsides and forests.
For this torta, I wanted to use up both kale and summer squash from our garden, but I wanted the filling to be a simple one because I didn't have alot of time to spend in the kitchen.
The result was delicious! It's good hot or cold or room temperature and we enjoyed it the leftovers for lunch the next day (great picnic fare!). I will use this simple mixture again with other veggies. You could substitute any other type of greens for the kale, and you could use cooked potato, winter squash or eggplant instead of the summer squash.
BRYANNA'S CHEESE-Y VEGAN KALE & SUMMER SQUASH TORTA (ITALIAN-STYLE SAVORY TART) WITH CRISPY LOW-FAT OLIVE OIL PASTRY
Serves 4-6 (depending on appetites!)
Low-Fat Olive Oil Pastry Dough (make this first!):
2 cups unbleached flour
1/2 tsp. salt
1/4 cup olive oil
2/3 cup ice-cold water
Filling:
12 ounces kale leaves (weigh after taking stems off), thinly sliced
12 ounces summer squash (I used a combination of zucchini and pattypan squash), sliced about 3/8" thick (cut pattypan squash into thin wedges)
1 medium onion, thinly sliced
2 tablespoons olive oil
1/2 tsp. salt
freshly-ground black pepper to taste
1/2 tsp. dried mint, or 1 1/2 tsp. minced fresh mint
Cheese-y Mixture:
12.3 ounce box extra-firm silken tofu
1/2 cup nondairy milk
1/4 cup nutritional yeast flakes
2 tablespoons cornstarch, wheat starch or oat flour, OR egg replacer powder
1 tablespoon light miso
OPTIONAL TOPPING:
a handful of shredded vegan melting cheese
a generous sprinkling of vegan Parmesan (We like GoVeggie! brand.)
To make the Dough:
Whisk together the flour and salt in a medium bowl. Drizzle in the olive oil and mix with a fork or your fingers -- there will be some small lumps, and that's fine. Drizzle in the cold water slowly, mixing with a fork. When it comes together, knead it gently into a ball and cover with plastic wrap or a damp cloth.
Refrigerate while you make the filling.
To make the Filling:
Heat a large pot of water over high heat until it boils.
Add the sliced kale and boil for about 30 seconds, turn off the heat and place the lid on the pot. Let stand while you place the zucchini rounds and/or pattypan squash wedges and sliced onion on a baking sheet, and sprinkle them with the 2 tablespoons of olive oil, 1/2 teaspoon salt, pepper and mint. Mix gently with your fingers and spread the mixture out again. Place the the baking sheet under your oven's broiler on High, about 4 inches below the heat source. Broil, watching carefully, until the vegetables begin to brown and are softened.
Immediately remove them from the oven and turn off the broiler. Preheat the oven to 375˚F.
Now drain the kale from the pot in a colander and run cold water over it. Squeeze as much water out of the kale as possible. Combine the kale and zucchini/onion mixture in a mixing bowl.
In a blender or food processor, mix together the silken tofu, nondairy milk, nutritional yeast, starch or alternate, and miso until smooth. Pour this into the bowl with the vegetables and mix gently. If you like, add some vegan Parmesan to taste-- a couple of tablespoons, if you like.
Spray or lightly brush a 14” pizza pan with oil and sprinkle lightly with flour.
On a floured surface (I use a large sheet of baking parchment sprinkled with flour) flatten the ball of Dough a bit and, using the “roll from the center forward, quarter turn, repeat” method, and flouring lightly as necessary, roll the dough out into a 18”-in-diameter round (doesn't have to be perfect!). This dough will roll out thinly quite nicely, but watch for tearing.
To transfer to the pan, sprinkle the round lightly with flour, fold loosely in half and then in half again. Transfer the dough carefully to the prepared pizza pan and carefully unfold the dough, which will overlap the edge of the pan by a few inches. (OR roll it up around the rolling pin, loosely, and transfer it to the pan by starting at the top of the pan and unrolling the pastry over the pan.) Evenly spread the Filling into a 12-inch circle in the center of the dough.
If you like, sprinkle the Filling with a handful of shredded vegan melting cheese.
Carefully bring the overlapping dough up around the filling, to make a freeform pie. Pleat the edges of the dough over the filling, leaving an open circle in the center. Brush or spray the dough lightly with oil.
Bake about 35 minutes, or until the torta is golden and starting to brown. Place the pan on a cooling rack. Cut the torta into 6 or 8 wedges and serve hot or at room temperature.

TORTA VERDE (LIGURIAN SAVORY CHARD AND POTATO TART WITH OLIVE OIL PASTRY)
As I mentioned in my blog last week, we have lots of lovely Swiss chard growing in our mini-garden, so I thought of this dish to use up some of it in an interesting way.
This type of delicious savory pie (many of them based on vegetables in season) is common all over Italy, but especially in the Italian province of Liguria, on the Italian Riviera, where my paternal grandmother’s family originated. It’s a large, thin double-crusted tart baked on a pizza pan

(BTW, you can substitute any of your favorite greens for the chard in this pie.)
I’ve used my “Quick Tofu Feta Crumble” in place of the mildly tangy tuma fresca soft cheese of the region, and a binding mixture of silken tofu, nondairy milk and egg replacer instead of the customary eggs.

BRYANNA’S TORTA VERDE (LIGURIAN CHARD, POTATO AND “SOFT CHEESE” TART)
Serves 6 to 8
Dough:
1 1/4 cups unbleached white flour
1/2 teaspoon salt
1 1/2 tablespoons extra virgin olive oil
1/2 cup ice cold water
Filling:
10 large Swiss chard leaves, washed, drained, stems discarded, leaves sliced 1/2” thick (4 cups)
1 medium Russet potato, steamed, peeled, and cut into 1/2” dice
1 medium onion, minced
2 tablespoons Italian parsley (flat leaf), minced
(Note: I mince the onions and parsley together in the food processor)
1 1/4 cups “Quick Tofu Feta Crumble” (recipe below)
1/2 teaspoon salt
Freshly-ground black pepper to taste
2 tablespoons extra virgin olive oil
Binder:
1/4 cup medium firm tofu, or extra-firm silken tofu
2 tablespoons nondairy milk
1/2 tablespoon nutritional yeast flakes
1 tablespoon egg replacer
To Finish:
1 1/2 tablespoons extra virgin olive oil
Make the dough first: Whisk together the flour and salt in a medium bowl. Drizzle in the oil and mix with your fingers or a fork. Drizzle in the cold water slowly, mixing with a fork as you go. When it holds together, knead it gently into a ball, cover with plastic wrap or a damp cloth and refrigerate for at least 30 minutes.
While the Dough is chilling, make the Filling: Heat a large pot
Make the Tofu Feta Crumble (see recipe below) and mix it in a large bowl with the potatoes, onions and parsley. Add the 1/2 teaspoon salt and freshly-ground pepper to taste, and mix well. Stir in the minced chard.
Mix the Binder ingredients with an immersion/stick blender
Preheat the oven to 375˚F.
Spray or lightly brush a 14” pizza pan
Cut of 1/3rd of the dough and set aside under a damp towel or plastic wrap while you work with the large piece. On a floured surface (Note: you can cover your counter with a large sheet of baking parchment and flour that, if you wish—this helps prevent sticking), flatten the larger ball of dough a bit and, using the “roll from the center forward, quarter turn, repeat” method, and flouring lightly if necessary, roll the dough out into a 15”-in-diameter round. This dough will roll out thinly quite nicely, but watch for tearing.
Sprinkle the round lightly with flour, fold loosely in half and then in half again. Transfer the dough carefully to the prepared pizza pan
Now roll out the remaining, smaller ball of dough the same way to make a thin 13”-in-diameter round. Using the same method of transfer, place the dough over the Filling. It should overlap the Filling a little. Brush the exposed part of the bottom crust lightly with water and fold it over the top crust edge. Crimp to seal and pierce the top crust in various places to allow steam to escape and prevent the crust from puffing up. “Dimple” the top of the torta with your fingertips and drizzle or brush with the remaining 1 1/2 tablespoons of olive oil.
Bake about 35 minutes, or until it is golden and starting to brown. Place the pan on a cooling rack

BRYANNA’S QUICK TOFU FETA CRUMBLE
Makes about 1 1/4 cups
8 ounces firm tofu (NOT silken), crumbled
4 teaspoons miso (not a very dark type)
2 teaspoons lemon juice
1/3 teaspoon salt
Mix and mash together all of the ingredients well with a fork. It will keep for a week or so, refrigerated in a covered container.

VEGAN LEMON MERINGUE PIE!

Alice from Angel Food just told me that they discontinued the meringue mix! Darn!
Well, stay tuned-- I'll have to invent something myself.
Why another dessert so soon, when we are on the WW Core Food Plan (I have lost 14 lbs and DH has lost 17!)? It was DH's birthday on Thursday (yes, we are both Geminis!), and I promised to make him a vegan lemon meringue pie. We had invited two other couples, so I figured one pie would serve the 6 of us with no leftovers-- perfect for a little splurge! I planned to use my low-fat olive oil pastry, and try out the meringue topping made with the Angel Food Vegan Meringue Cookie Mix.

The pie was a great hit with our omni guests! They couldn't figure out how I did it without egg whites!

BRYANNA’S VEGAN LEMON MERINGUE PIE
Makes 1/ 9” pie
6 servings
Make this delicious treat the morning of the day you plan to serve it. This recipe has 3 components—crust, filling, and topping. It sounds complicated, but it really is not. Just follow the sequence as I describe it.
For the topping, you need a packet of Angel Food Vegan Meringue Cookie Mix. The mix (which comes from NZ) is available online from Angel Food. Theyhave a list of international vendors who sell it, but I don't know how up-to-date-it is because the US and Canadian vendors listed don't seem to carry it anymore. So, contact Alice here if you want updated info.
You also need some Instant Clear-Jel (read about it at the end of this blog post). It isn't available on store shelves-- here in Canada I had to get 11 lbs. of it from a bakery supply company (Snowcap), but maybe a bakery would sell you a smaller amount.
You can now order it in Canada from the Gourmet Warehouse (Vancouver).

Make and assemble the pie as follows:
1.) THE CRUST:

BRYANNA'S LOW-FAT, CRISPY OLIVE OIL PASTRY
Servings: 6 Yield: 1 crust
This crispy pastry is very easy to handle and quite low in fat (about 1 tsp. of olive oil per serving).
1 cup unbleached flour (NOT pastry flour)
3/4 tsp salt
2 Tbs extra-virgin olive oil
1/3 cup ice-cold water
Mix the flour and salt in a bowl. Cut in the cold olive oil briefly. Add the water and mix with a fork until it hold together. Handle as little as possible. Lightly form it into a ball and refrigerate, covered, for 30 minutes.
Preheat the oven to 400°F.
On a lightly-floured piece of baking parchment, roll out the dough to fit a 9" pie pan. Bring the pastry up to the inside top of the pan and flute it, to make a shallow shell-- not over the edge. Trim the top edge neatly. Prick the bottom and sides with a fork. Place a square of foil or baking parchment over the dough and weight down with a layer of dried beans. Bake 6 minutes. Remove beans and foil and bake 8-10 minutes more, or until it begins to turn golden. Remove from the oven and cool the pastry on a rack.
Reduce oven heat to 212°F. Make the Filling while the pastry cools.
2.) BRYANNA’S VEGAN LEMON MERINGUE PIE FILLING:
This filling is tangy and decidedly lemony!

Whisk together in a medium saucepan with a heavy bottom:
1 c. light unbleached organic granulated sugar
2/3 c. nondairy milk
7 T. orange juice (for color)
6 T. cornstarch
1/4 tsp. salt
Stir constantly until the mixture is thickened and translucent.
Immediately whisk in:
1/2 c. fresh or organic bottled lemon juice
2 T. grated lemon zest OR 2 tsp. lemon extract
1 T. vegan “buttery" spread (try my homemade palm oil-free vegan "Buttah")
Cool this for 5 minutes. Pour it into the cooled pie shell and smooth the top evenly. Set aside.
Immediately make the Meringue Topping as follows:
3.) ANGEL FOOD’S VEGAN MERINGUE TOPPING:
Have ready a packet of Angel Food Vegan Meringue Cookie Mix (see info about this mix and where to purchase it in text at the beginning of the recipe).
1. In a stand mixer
2 T. sachet A
1/4 cup water
2. Add:
1/4 cup water
2. Add:
3/4 cup superfine (caster) sugar
(I just briefly grind granulated organic unbleached sugar in a clean, dry electric coffee/spice mill—BCG)
Whip for several minutes. Again, scrape the bottom and sides of the bowl to make sure you have incorporated all of the powder and sugar.

3. Add:

2 1/2 tsp. sachet B
4 tsp. Instant Clear-Jel
(See info in the text at the top of the main recipe for other places to purchase)
Whip again for several minutes, until it is really fluffy, and you can’t see any granules in it (scrape the bottom and sides as necessary to make sure all of the Clear-Jel gets mixed in).
You can see in the following photo that there are still granules of Clear-Jel showing:

Place spoonfuls of the meringue onto the surface of your pie. The mixture is very thick and sticky. It will spread out a little when baked and the tops of meringue “blobs” will smooth out somewhat, so allow for that. I used 10 spoonfuls around the edge and one larger one in the center.

Bake at 100°C (212°-215°F) for about 20 minutes.
Cool the pie on a rack and then refrigerate until serving. Serve the same day it is made.

RUSTIC APPLE-RAISIN TART WITH CRISPY, LOW-FAT OLIVE OIL PASTRY

This is a traditional pastry for savory pies in some parts of Italy, and I have used it for several years. I was always impressed with the crisp texture and ease of handling of this dough, considering how little oil there is in it (2 tablespoons)! Since olive oil is my primary oil for cooking (being a tasty, monosaturated oil), I have been wanting to try it in a fruit pie. But, since being on the WW Core Plan for the last 7 weeks, I haven't been making very many desserts.
Yesterday, however, we were invited by some friends to come over for coffee, I had some apples that needed using, and we had some extra WW points leftover, so I offered to bring an apple tart. I was impressed with the almost buttery taste of it and our hosts gobbled it up with groans of pleasure. This will now be my choice for pastry for any free-form pie! (I have yet to try it as a regular 2-crust covered pie.) I may try it with half whole wheat pastry flour next time-- I'll let you know how it works!
The apple filling is moderately sweetened with agave nectar and raisins plumped in sherry, but you can alter that as you like. Enjoy!

BRYANNA'S RUSTIC APPLE-RAISIN TART WITH CRISPY, LOW-FAT OLIVE OIL PASTRY
Servings: 6
Yield: 1 freeform tart
This is a lovely, not-too-sweet treat. PS: If you would like a large tart, double the recipe, including the pastry and form the tart on a 14" pizza pan. Bake the large pie for 1 hour.
1 recipe Bryanna's Low-Fat, Crispy Olive Oil Pastry
(See recipe in Cooking Tips below)
Filling:
1/4 cup raisins (organic Thompson
soaked in:
2-4 tablespoons medium sherry (enough to cover the raisins)
3 large apples, cored and thinly sliced (I don't peel them- it's up to you!)
(whichever variety you like-- I used what I had: 1 Cox's Orange Pippin, and 2 Galas)
1 tablespoon lemon juice
1/4 cup agave nectar
Spices:
1/2 teaspoon cinnamon
1/4 teaspoon ground ginger
a few gratings of nutmeg
1 pinch salt
3/4 tablespoon cornstarch
Optional:
You can add some grated lemon or orange zest, if you like
Finish:
soy milk
Make the pastry as instructed in the recipe below. Place in a bowl covered with plastic wrap and refrigerate while you prepare the Fillling.
You need to soak the raisins and there are 2 ways to do this. 1.) place the raisins in a small microwave-proof bowl and cover with sherry. Cook in the microwave for 30 seconds, or as long as it takes to just come to a boil. Or, 2.) place the raisins and sherry in a small saucepan and bring just to a boil over high heat. Immediately remove from the heat. Either way, cover the bowl or pan and let sit while you go on to the next step.
Mix the sliced apples in a large bowl with the lemon juice, agave nectar, spices and salt. Add the plumped raisins and sherry, optional citrus zest (if using), and sprinkle with the cornstarch.
Combine well. Set aside. Preheat the oven to 400°F.
On a lightly-floured piece of baking parchment
Brush the pastry with soy or nut milk and sprinkle with a little organic granulated sugar.
Cover the fruit in the open circle (not the pastry) with a circle of foil cut to fit.

Place the pie in the oven and immediately reduce the heat to 350°F.
Bake the pie for about 45 minutes. Remove the foil and poke the apples with a fork to see if they are tender. If they are, remove the foil. If the pastry not golden yet, bake another 5-10 minutes, or until golden.
Cool on a rack until just warm. Serve warm, if possible. Cut into 6 wedges to serve.

This crispy pastry is very easy to handle and quite low in fat (about 1 tsp. of olive oil per serving). Perfect for rustic "freeform" tarts. If you want to make a larger tart, double the recipe and make it on a 14" pizza pan.
1 cup unbleached flour
