SPICY SPUR-OF-THE-MOMENT MELANGE OF BLACK BEANS, ROASTED VEGETABLES & SEITAN (OR ALTERNATIVE)

Yesterday, I didn't get around to thinking about what to make for dinner until late afternoon. Rummaging through the fridge for ideas, I saw the black beans that I had cooked the day before, and decided to make a bean stew of some sort, to go with the cooked rice I had in the freezer, and the kale I had picked out of the garden.

Finding some red and green bell peppers, a sweet potato, and some unique new seitan that I made a few days before (see the note about where to find the recipe in the ingredient list of the recipe below) gave me the idea for a spicy black bean and roasted vegetable stew, which resulted in this recipe.

It was a hit-- my husband declared it his favorite bean stew to date! And what's not to like?  Spicy, hearty, full of vegetables and protein and good flavors.  I hope you'll give it a try.

BRYANNA'S SPICY SPUR-OF-THE-MOMENT MELANGE OF BLACK BEANS, ROASTED VEGETABLES AND SEITAN (OR ALTERNATIVE)
Serves 6 to 8

Roasted or Broiled Vegetable/Seitan Mixture:
1 large red bell pepper, seeded and cut into approximately 3/4” chunks
1 large green bell pepper, seeded and cut into approximately 3/4” chunks
1 medium sweet potato, peeled and cut into 3/4” chunks
2-3 cups of seitan strips (Or, alternatively, you could use reconstituted Soy Curls™️, smoked tempeh or smoked tofu instead.)
(For the seitan, I used the “Pulled Phauxrk” [pronounced like “fork”] recipe from https://avocadosandales.com/2018/02/06/pulled-phauxrk/, which is amazing!)
about 2 tablespoons of dark sesame oil
smoked sweet or hot paprika
salt to taste
Rest of the Melange:
1 tablespoon olive oil
1 medium onion, chopped
2 large cloves garlic, peeled and minced
4 cups cooked or canned black beans (use 2/ 19 oz. cans), rinsed and drained
2 cups vegan broth
14 oz. whole or diced canned tomatoes and juice (If tomatoes are whole, chop them roughly.)
2 tsp. EACH dried thyme and oregano
1 bay leaf
1 chopped canned chipotle chile in adobo sauce, with the a little of the sauce
(Idea: Freeze the rest of the chiles and sauce in the can in an ice cube tray, then pop the frozen chiles and sauce into a freezer container or bag to use in other dishes.) 
liquid smoke to taste (about 1 teaspoon)
Serve with:
steamed rice
braised greens with garlic

Making the Roasted or Broiled Vegetable/Seitan Mixture:
Place the pepper chunks, sweet potato chunks and seitan in a 9 x 13” baking pan and toss with the sesame oil, smoked paprika and salt to taste.  

Now, there are two ways to cook the veggie/seitan mixture (well, three ways actually-- you could grill it, but I'll leave that up to you!)-- roasting or broiling. If you want to roast, place the pan in a preheated 450°F oven and roast for about 15-20 minutes, tossing once or twice, or until the vegetables are tender but not falling apart, and a bit browned. If you want to broil (my choice), add a few squirts of water from a squeeze bottle to the pan and place the pan  about 4 inches under your broiler coils; turn broiler on to High.  Broil until the mixture until the vegetables are tender but not falling apart (adding a few more squirts of water if they are getting too dry), and a bit browned, and the seitan is a bit charred (but not too much!).  Remove from the oven and set aside.

To make the Rest of the Melange:
Saute the chopped onions and garlic in the olive oil in your wok or stew pot or large, heavy skillet over medium-high heat until softened and perhaps a bit browned. Another option, which will allow you to proceed with the next part of the recipe, is to cook the onions and garlic in the olive oil in a covered microwave-safe pie pan or casserole with a lid. Cook on High for about 5 minutes, then scrape into your pot or pan.

Add the beans, broth, tomatoes, the Roasted or Broiled Vegetable/Seitan Mixture, thyme, oregano, bay leaf, chopped chipotle chile with its sauce, and the liquid smoke.  Mix thoroughly but gently with a large spoon. Bring to a boil, then turn down to a simmer, cover and cook for about 20 minutes.  (That's enough time to cook some rice, if you haven't done it already.) 


Taste for salt and serve with the rice and braised greens.

SPICY VEGAN BASQUE CHICKPEA & SAUSAGE STEW

About 3 years ago we discovered that one side of my father's family might have Basque roots in Spain.  That, of course, made me curious about Spanish Basque culture and cuisine.  (UPDATE, 2017-- this has been confirmed by my sister's DNA test.) The cuisine is quite meat-heavy, but many dishes can be made vegan. One category of dishes that Basques are well known for is their delicious bean stews. (I posted one with red beans a few years ago.)

The following vegan version of another common Basque bean stew based on chickpeas is from my book "World Vegan Feast".  Since I always keep a good store of home-cooked beans (including chickpeas) and some Field Roast Chipotle sausages, in my freezer, this satisfying stew is one of my go-to dishes for a quick, easy and delicious dinner.

BRYANNA'S SPICY VEGAN BASQUE CHICKPEA & SAUSAGE STEW 
Serves 4
There are many versions of this common Basque bean stew-- this one, thick with vegetables and spicy vegan sausages, is super-simple and super-delicious. The recipe is easily doubled.

**This recipe, slightly altered, is from my book World Vegan Feast.**

8 ounces dried chickpeas, picked over, rinsed and drained and soaked overnight in plenty of water
OR USE 3 1/4 cups drained cooked or canned chickpeas (If you use these, omit the first step in the recipe.)
1 tablespoon olive oil
1 small onion, chopped
1 small green bell pepper, cut into 1/2-inch dice
1 small red bell pepper, cut into 1/2-inch dice
1 medium carrot, scrubbed and cut into 1/4-inch-thick rounds
4 to 6 ounces vegan chorizo or spicy vegan sausage (such as Field Roast Chipotle, which is very spicy) coarsely crumbled or sliced diagonally into 1/4-inch thin rounds
1 (14-ounce) can plum tomatoes, with juice
1/2 to 1 cup vegan broth (depending on how "soupy" you prefer the stew)
salt to taste

1.) Drain the soaked chickpeas and put in a medium pot with water to cover, with 2 to 3 inches water above the beans. Simmer for 2 hours or until the chickpeas are tender. Drain them and set aside.  (Omit this step if you use cooked or canned chickpeas.)

2.) Use the same pot to heat the olive oil over medium-high heat. Add the onions, bell peppers and carrot and sauté until the onion starts to brown. Add the chorizo or sausage and brown it a bit. Add the tomatoes and juice, crushing the tomatoes a bit. Add the broth and bring the stew to a boil. Reduce the heat to a simmer and cook, covered, for about 30 minutes. Taste for salt and serve with crusty bread, or, though it's not as authentic, you could substitute steamed rice or cornbread to soak up the juices.

BASQUE-STYLE RED BEAN STEW WITH VEGAN CHORIZO

This is going to be a very brief post because I'm cleaning house and making food for some visitors.  But I've been wanting to post this stew for a couple of weeks, but I got sidetracked with rhubarb and spoonbread.

My sister's DNA ancestry test confirmed that there is some Basque on the Spanish side of my father's family, which gives me a special interest in that particular cuisine.  I've only scratched the surface so far, but have discovered that bean stews, or one-dish bean-pots, are very popular in Basque cooking.  They usually contain meat, but that's easily remedied with vegan sausages, seitan, tempeh, etc., as well as full-flavored vegan broths. I look forward to trying other variations on the theme.

We had a guest when I made this, and she was very enthusiastic in her praise!

BRYANNA'S BASQUE-STYLE RED BEAN STEW WITH VEGAN CHORIZO
 Serves 4  
Spicy comfort food! Very simple (quick and easy to make), but, oh, so good! Serve with crusty bread to sop up the remaining liquid, or with cornbread, which complements it well.  You might also like to enjoy a glass of red wine with this dish.
 
2 tablespoons    dark sesame oil  
1 large    onion,chopped or thinly sliced  
2 medium    green bell peppers, seeded and sliced  
2 cans (19 oz.) (or 4 cups cooked)   small red beans (or substitute pinto or Romano beans), rinsed and drained 
2 cups    rich vegetarian broth (preferably made with Better Than Bouillon No-Chicken Vegan Broth Base)
3    Field Roast Chipotle Vegan Sausages or other vegan chorizo, in 1-inch pieces  
OPTIONAL: liquid smoke  
1 tsp    Spanish smoked paprika (pimentón), hot or sweet (the Field Roast Sausages makes the stew quite spicy-hot, so you may want to use the sweet variety)

 Heat the oil in a heavy pot over high heat.  Add the onions and peppers and lower the heat to medium high.  Stir-cook until the onions are soft. (Alternatively, you can microwave the onions and peppers in a covered microwave-safe casserole for about 6 minutes, or until soft.)

 
Mix the softened onions and peppers in the heavy pot ith the beans, broth, sausage pieces, a few shakes of liquid smoke, and the smoked paprika. Bring to a boil, turn the heat down and simmer, covered, for about 15 minutes or until the stew has thickened a bit.  Serve with crusty bread, rice or cornbread.
