I have to say though, as someone who still eats cheese, that it's not as "cheesy" as I would have liked. I really enjoy nutritional yeast on its own, eating it with a spoon, because of its cheesiness. If i wanted to amp up the flavor, would you suggest more miso or more yeast?<BR/><BR/>As an aside, I think this would make an *awesome* "parmesan" breading for seitan cutlets and fish.<BR/><BR/>I've been following your blog for a long time, since about 5 years ago when you generously sent me a word file to start me off on my explorations of seitan.
