If you Google "using bean flour in cooking" or "cooking with bean flour' or "baking with bean flour', you'll find lots of advice from bean grower's associations, Bob's Red Mill, food preparedness sites, etc. Or Google"cooking with.... bean flour"-- a specific bean. You could add a little bit just for some extra nutrition, but there is no gluten in bean flour, and they have a stronger taste, so they can't be used measure-for-measure instead of white flour in anything except for thickening.
