I thought I had chickpea flour whe...Thanks Bryanna! I thought I had chickpea flour when I was dreaming of pizza last night, but realized I didn't. So I used the basics of your recipe with teff flour (I'm going insane trying to perfect injera and I kind of wanted to use the teff for something else...every time I open my pantry it taunts me and my inability to make good injera). It worked perfectly as a crust, and was actually really sturdy in the end (I baked it for 25 minutes and then again with the toppings for ten, I guess teff takes longer to cook and I used less water for a firmer crust so I could eat with my hands). I added a bit of berbere and made the sauce with Ethiopan spices, tomatoes and red lentils, then topped it with roasted yam and spinach. Certainly a very untraditional pizza, but innovative nevertheless.
