I have never detected one (and I am a pretty sensitive taster) and neither has anyone else that I know who has made them or tasted them. I wonder if you are a "super-taster" (check out: http://supertastertest.com/ ). Possibly it could be the type of cocoa you use. You might want to try a dutched (Dutch process) cocoa powder-- the "dutching" process removes acid components in the chocolate flavor. <br /><br />That said, if you use vegan butter, just substitute it for the applesauce-- don't use both. Texture is pretty good, definitely dense and chewy, could be a little moister, and it probably would have been better if I'd used an actual food processor and blender (which I don't have), as opposed to using a beater and mashing the beans as best as I could beforehand. However, the taste is a little weird for me; it's simultaneously too bitter and tangy/fruity, probably a result of the large amount of cocoa powder and apple sauce, respectively. However, since the texture was pretty good I think I want to try to make these brownies again using margarine. I know on the recipe for the okara brownies, it called for 1/2 cup of melted margarine. Does that mean I need to melt 1/2 a cup of margarine and add it, or do I melt some margarine and add 1/2 cup of the melted stuff? (Or is it the same thing? Sorry, I'm pretty cooking-challenged.)
