It is THE time when we give thanks for all that we have whether it be the people in our lives, our health, having a home, work that satisfy us and provides for us. I love making roasted root vegetables, mashed sweet potatoes and yukon gold potatoes and rutabagas. Brussel sprouts, haricot vert, and kale. Becoming vegan taught me how to cook, and the biggest reason I think I became vegan is my husband: falling in love with him opened my heart so much it opened my heart to animals as well and I couldn't be an omni anymore!
