

Vegan Lemon Angel Torte, in progress
Sneak-Peek: A newly-vegan college student wrote to me asking if it was possible-- he wanted a vegan angel food cake very badly for his birthday. Well, it's generally been thought to be an impossibility, because of the 12 stiffly-beaten egg whites and sugar that form the structure of an angel food cake. So, I worked on it for a few days, and I think I'm coming close. I'm calling it an "Angel Torte" rather than an angel food cake, because it's not going to be just like the real thing. But I'm going for light and fat-free, like the original.
These are pictures of the lemon version-- made a chocolate one, too, which was really tasty, but it sank a bit, so I didn't take pictures of it. I took the lemon cake to a friend's for dinner last night and we ate it with blueberries and a tofu-coconut topping. Everyone loved it, including the omnis! But I've still got some ideas for improvement.
So, I'm still working on it and I hope it will be in the July/Aug/Sep issue of my Vegan Feast newsletter. I think it's going to be as close as a vegan can get to "angel food". I'll keep you posted!

Thanks, Susan! Well, this IS a fat-free cake, but I usually invite people over when I do desserts, or take them to someone's house, as in this case, so we don't have alot leftover! Unfortunately, I'm in the mood to experiment with desserts just now, but I have to watch it!
Bryanna ... it's funny you are working this recipe now because I just found a recipe for Mock Angel Cake in a new Company's Coming cookbook. It only has three egg whites and I was thinking it might be fairly easy to veganize! If you would like the recipe to play around with, let me know. Maybe it will help with your recipe ... Shona :)

I tried off and on for years to make one of these. I found I could not use pan spray to get it out of the pan because it contributed to sinking; but a non-stick pan worked for some reason. It stuck only a little at the top which was enough to hold it in place till it cooled. I ended up calling mine a chiffon cake! I tried SO many different things, I can barely remember. They all tasted good, but it was the fluffy lightness that was difficult. It was almost fatfree. Moderate success, I guess.
Yours looks fabulous! I love the glaze and lemon rind; it looks perfect!
I know you can't give away too much, but is the reason this is not finished because it's a bit heavy?
It's not a heavy cake, actually, but you know angel food has that springiness? Don't know if I can manage that. A smaller pan might help.
I am seriously looking forward to how this recipe turns out! I use to love angel food cake. I have a recipe for vegan angel food cake but have no idea how it would turn out. If anyone can make a vegan angel food cake it would be you! Looking forward to the final results!!! Yummmmmmm

Tammy, there are a plain, lemon or orange, and chocolate versions.
